Pink Pigeon mojito

This is a tangy take on the classic mojito, using Pink Pigeon, a vanilla spiced rum.

Serves: 1

Ingredients

50ml Pink Pigeon vanilla spiced rum
8 mint leaves
15ml pressed lime
2 tsp (10ml) sugar syrup
soda water
25-50ml cranberry juice

Method

Muddle the leaves in a highball glass and add ice to fill it halfway. Pour in the lime juice, sugar syrup, Pink Pigeon and cranberry juice. Top with a splash of soda.
