Johannesburg-born chef Riaan Burger has been appointed as the new executive chef at Mondiall at the V&A Waterfront. This change comes as Peter Tempelhoff departs from Mondiall to pursue a larger role at The Greenhouse and The Collection by Liz McGrath.
Chef Riaan is set to release a new autumn menu inspired by the experience he gained while travelling the world with Crystal Cruises. While the menu will retain some favourites, Riaan is working alongside Mondiall co-founder the restaurateur Patrick Symington to reinvent timeless classics with a contemporary twist. “My aim is to make Mondiall a household name and a local go-to restaurant where guests can expect a warm and welcoming atmosphere and exciting food of the highest quality, made with fresh, regional ingredients,” says Riaan.
Mondiall’s new chef arrives with a wealth of local and international experience: his portfolio features big hotel names like Protea Hotel Wanderers, African Pride Melrose Arch Hotel, Westcliff, Arabella Hotel and Spa, and Twelve Apostles Hotel and Spa. Before joining Mondiall, Riaan worked as executive chef at Raffles Beijing hotel in China for two years where he headed up the hotel’s three restaurants – a French fine-dining restaurant, a New-York-style brasserie and an Italian eatery.
