In the wake of the massively disappointing salad cake we have a new hopeful for you: water cake. Made with water and agar, the gloriously domed ‘raindrop cake’ is taking Instagram by storm with its magnificent curves.
It’s the creation of Darren Wong of Smorgasburg in Brooklyn, New York, who was inspired by a Japanese product called shingen mochi.

It is, however, in no way a cake – or even really food. According to Buzzfeed, it contains zero calories itself, although it’s served with roasted soybean flour and brown sugar syrup for flavour.
The Japanese version is sometimes served with matcha, or flavoured like jelly (when it unfortunately loses its perfect raindrop clarity).
We have several questions, some mildly caustic. However, it does remind us of that joyous childhood occupation of pouring water into lotus leaves to watch it form rolling marbles.
