A fresh, sweet and crunchy salad, this makes for a delicious and healthy lunch. A great idea for meat-free Monday too.
Serves: 4
Preparation time: 10 minutes
Separate the lettuce leaves. Either wrap the mangoes, spring onions and mozzarella in the lettuce leaves or make into a big salad with the mangetout and beetroot. Mix the dressing and drizzle over.
