Shayona began in 1999 specializing in sweet meats and savouries, with a bit of takeaway on the side. Everything was made on the premises, from paneer to ghee, to sweets made with imported buffalo milk powder. In 2004, they expanded their operations, and what was a 25m2 one shop show, emerged to a fully equipped restaurant in the heart of Mayfair.
