Pistachio and date couscous

Couscous has never been this sexy. It makes a perfect accompaniment to roast chicken.

Serves: 2 to 4

Ingredients

2 cups (500ml) couscous
2 cups (500ml) boiling salted water
extra virgin olive oil
Salt and black pepper
50g finely chopped dates
100g chopped pistachios

Method

Cook the couscous in the salted water according to the packet instructions. Fork through, add a drizzle of olive oil and season. Rub between your fingers to separate further, then use your hands to mix in the dates. Mix in the pistachios just before serving.
