Not only did Mosaic win a place on Eat Out’s 2009 Top 10 Restaurants list, the delightful Miss Dartnell was honoured with the 2010 Eat Out Chef of the Year title. We catch up with her.

Most vivid food memory?
When I was eight, my parents took me to La Madeleine Restaurant in Pretoria. I ordered oysters thinking they were smoked mussels! I’ve loved them ever since.

Favourite local food?
Malva pudding with homemade custard. I also love roasted leg of lamb. I recently did a wonderful boerekos spread for some Swiss friends.
