A wooden board of 30-day dry-aged steak cuts are brought to each table and knowledgeably described by the waiters. The more familiar wet-aged steaks like sirloin, fillet and rump are served basted or not, but the sheer brazenness of the dry-aged display makes choosing the flat iron, spider or extraordinary tomahawk steak nearly impossible to resist. For maximum flavour, your waiter will boldly advise exactly how your steak should be grilled, and he’ll be right. Trust him!
The homemade basting of chutney, tomato and Worcester sauce leaves a shiny gleam on the perfectly grilled sirloin served with wholegrain mustard and a green herb relish.
