Long famous for its fabulous soufflés, Johannesburgs much-loved little french eatery, Bistro 277 on Main, recently launched a gourmet soufflé menu.

Reminiscent of bistronomia, the gourmet phenomenon which has become popular in Europe lately, the menu offers such airy soufflé delights as goat’s cheese and butternut; crab, mussel and dill or asparagus and chorizo.

For the sweet teeth, caramel and candied fruit; passion fruit, or honeyed pumpkin with cinnamon will have to do!
