Fire is at the heart of the cooking ethos here, as are global tastes with a modern slant. Within the context of the location – The Cradle of Humankind region – fire speaks to the simplicity and essence of human evolution. Chef Bernado Corti’s idea is to celebrate this by focusing on simple and traditional food from different countries and continents to highlight their beauty. The tapas, wood-fired grill and farm table menu that changes periodically takes its cues from Argentinian, Asian, Italian, Spanish and African influences.
Start with the super soft artisanal focaccia and sourdough bread served with sun-dried tomato tapenade, herb butter and baba ghanoush. The Caldo de Camaron (Mexican shrimp broth) and the soup of the day are also appealing options, though they may not come as warm as you prefer.
Mix up the tapas dishes to share. The popular fritto misto (Italian fried vegetables and seafood) is lovable for the glossy texture of the seafood, while the pechito de cerdo (crispy slices of pork belly with chimichurri) is flavourful but borders on being dry. The lamb kidneys with harissa sauce and butter beans hide charred slices of orange beneath, which elevate the warm dish. Another warming plate is the Next Door Farm oxtail stew, which brims with simple and nostalgic flavours.
There are of course chicken, fish, beef and pork options from the grill, but it’s the vegetarian dishes that shine, such as the smoked cabbage with homemade yoghurt and pangritata. Kids are considered and dessert is a compact but exciting varied list.
