In June we reported that PJ Vadas had a new restaurant up his sleeve. The chef has now announced the launch of Vadas Smokehouse and Bakery, which has opened on Spier Wine Farm.

Vadas Smokehouse & Bakery is situated in the space that once housed Hoghouse Bakery at Spier and has a focus on farm-to-table dining. PJ, who believes in supporting local quality-driven businesses and practices, has built the restaurant on a foundation of cooking with fire and smoke while focusing on sustainable meats, ethical farming practices and organic vegetables.

The menu at Vadas Smokehouse & Bakery is set to encourage family-style dining with platters for the table, creating a relaxed and informal environment. Think snacks of smoked olives, picked vegetable crudité, chorizo Scotch eggs and whipped hake roe with potato chips. For mains, smoked and grilled options include wood-roasted Angus rib-eye with bone marrow butter, pastrami lamb belly with pickled cucumber, fried chicken with smoked honey sauce and tequila-cured hot-smoked trout. An array of sides – including pork-fat fried chips – will also be available, as well as some veggie-friendly options.

The on-site bakery is also open for business with slow-fermented fresh sourdough breads and a selection of seasonal fruit pies and pastries daily – including PJ’s famed pasteis de nata.
Vadas Smokehouse & Bakery is now open Mondays to Saturdays for lunch and dinner, and on Sundays for lunch.
