Thick crust or thin? A bubble or two in the crust is perfect. Some pizza fanatics say it's all in the oven – a blistering hot wood-fired brick one does the trick. And then there is flipping the dough in the air. Does it really make a difference? Experts say it makes the dough more elastic. Real pizza aficionados are loyal to their toppings and, like me, may be considered boring. But we just know what we like.
My favourite is an ultra-crispy base topped with blue cheese, bacon and garlic and sometimes a touch of fresh minced chilli. My second choice is a traditional margarita in the colours of the Italian flag, with tomato, cheese and basil. I discovered chocolate and banana ones at the night market in Stone Town on Zanzibar, which were really delicious! I had one every night. But my best is still a cold slice the next morning – my family has strong opinions about that, though!
