New in Durban: Fusion Café

Fusion Café has opened in The Store’s premises in Silverton Road on the Berea and offers an innovative menu featuring world cuisine in both man-sized and snack portions.

Owners Caryn England and Shaun Smith of Fusion cookery school fame (left), stress that it’s fusion, not confusion, food. There is a strong experimental element to some of the dishes, such as the quirky vacuum-packed fillet, which is par-cooked in a dishwasher, and ice cream that is made at the table using liquid nitrogen.
