Before joining the Eat Out team as online editor I wrote for Good Taste magazine. There I not only gained a few kilos but also a lot of insight into the world of food and wine. Not that I needed much, I’ve only ever relied on my favourite and most well-attuned sense – taste. I’m what you would call “oyster mad’, “crème-brûlée crazy” and generally just plain “hungry”. So, in order to introduce myself, I thought I would ask myself some of the questions I usually reserve for chefs.
What’s the most unusual thing you’ve ever eaten?
Just one? Well, I’ve eaten scorpion vodka lollipops, snake – crumbed and fried like calamari rings, goat potjie, ox tongue, sweetbreads – I’m definitely an adventurous eater.
Your top three SA chefs?
Margot Janse is my favourite; she’s devilishly clever with ingredients and amazingly creative. Then there’s Michael Broughton: the man is magic to sauces – a real “saucerer”. And Luke Dale-Roberts, of course, he approaches the culinary world with such imaginative grace.
The dish you can’t forget?
Luke’s Oeuf la Colombe. Not only was this creation one of the tastiest things to ever hit my palate but the logistics of the dish left me baffled – and Luke wasn’t letting me in on his secret! This rich, dreamy “egg” was actually chicken mousse, foie gras and truffle somehow cooked inside an unbroken eggshell. Top marks!
