Formidable fromage at onewaterfront

Four months since Phil Alcock took the reigns at the Cape Graces onewaterfront restaurant, its not only his cooking thats creating a stir.

Word has it that the formidable cheese trolley which is served  in his popular Waterfront restaurant every night, is unrivalled  in the Cape.

A total of 40 cheeses are offered with an impressive 25 local  brands dominating the trolley. Since moving to South Africa  from the UK in 2001, Alcock’s food – and preference in cheese – reflects his love affair with the Rainbow Nation.

One of his local favourites is Haeley’s Farmhouse Cheddar made  on the Lourensford farm in Somerset West – a traditional  farmhouse cheddar containing no flavour enhancers, artificial 
colourings or preservatives, matured in a natural cave-like environment.

Another of his much-loved South African cheeses is from the KwaZulu-Natal region – the Natal Blue.  “It’s sensational enjoyed with homemade pepper crackers and watermelon 
preserve,” recommends Alcock.

Most of his formative years as chef was spent in Europe, and especially France – a culture which inspired his love of cheese.

Among the pungent French cheeses on offer, are such  interesting finds as the Morbier – a cows milk cheese  which reveals a thin layer of ash separating the morning  milking from the evening milking, once cut.

The cheeses are individually labelled, denoting the name and  origin of the cheese as well as the type of milk used.  Homemade pepper crackers, oatmeal biscuits and walnut & raisin 
bread
, as well as a selection of watermelon preserve, Cape gooseberry or mixed vegetable chutney accompanies your selection.

A choice of three cheeses are served at R45 – an additional R15 is charged for every cheese thereafter.
