The Royal Cafe, the latest addition to the flagship store of that esteemed landmark of Danish porcelain design, Royal Copenhagen, recently fathered a new culinary phenomenon called Smushi, reports www.monocle.com
Created by Rud Christiansen, Smushi is a traditional Danish smørrebrød (an open sandwhich on rye bread) with a contemporary sushi twist.
Considering the fishy finishes that traditionally top smørrebrød, such as smoked eel or gravad laks, the sushi twist seems quite an obvious evolution, but reportedly the concept has retail groups in Asia lining up to get in on the action.
