Creamy spoonfuls of perfectly cooked rice, flavoured with dried porcini mushrooms and sweet roasted butternut is a much-loved dish in our home. Sometimes jazzed up with Gorgonzola is just as delicious.
But no risotto I have tasted matched up to the most beautiful one I had at La Colombe on Saturday night. It was utterly fancy, as one would expect from Luke Dale-Roberts, and was the fourth course on the seven-course tasting menu.
It was described as risotto bordelaise, and consisted of two steamed up glasses, covered with a thin, square piece of wood. Inside the glasses were a few spoonfuls of the most glorious red wine risotto ever, delicately flavoured with bone marrow. On top of the board was a pile of finely shredded parsley, grated Parmesan and tiny cubes of charred fillet. And it was all skillfully mixed into the risotto at our table by the waiter – mind blowing!
