Earlier this year, chef John van Zyl brought the city bowl a minimalistic yet flavour-packed experience in the form of The Melting Pot, the pop-up that set up shop at Marrow’s 83 Loop Street. Now the previous head chef of Thali has found a permanent home for the new The Melting Pot Cafeteria, which has opened its doors at 64A Wale Street (the space above Honest Chocolate and The Gin Bar).
The pop-up concept was met with high praise from locals and chefs, who couldn’t get enough of chef John’s cooking, which is inspired by a melting pot of global flavours. The contemporary dishes were packed with bold flavours that were reminiscent of Korean, Thai, Sri Lankan, Vietnamese and Thai cuisine.
What’s on the menu now? Global flavours remain prominent on the small-plate-style menu and are very clearly inspired by the chefs’ recent food-fuelled travels. Think Thai steamed fish with vermicelli noodle salad; fried chicken with kimchi emulsion; taco carnitas with pork shoulder and green salsa; and a Brick Lane bagel with salt beef brisket.
