Reality check: there is no such thing as a totally organic restaurant. Not in South Africa, not anywhere in the world.
According to the South African Institute of Food Science and Technology, in order for a food to be certified organic it must meet certain organic production standards, which include the use of pure manure and the rejection of all chemicals and pesticides.
Tough enough if you’re selling apples in Pick ’n Pay, almost impossible if you’re running a restaurant relying on a hundred suppliers.
What can you do about that? Can you still go organic? Is it healthier? Does it really taste better?
