Shaun Munro, former executive chef of the Three Cities group of hotels, has recently taken over the reigns at the Beverly Hills Hotel in Umhlanga.
He has already made his mark in the Sugar Club restaurant, keeping much of the classical style that suits the formal room, but making the menu “sexier”. The use of top-quality ingredients prevail, pairing them to dramatic effect.
Try the terrine of pork confit with chorizo oil. But be warned, this is not budget territory.
