British chef Dan Evans, most recently at The Corner Post in Howick, has taken over the kitchen at Havana at Suncoast Casino on the Durban beachfront.
Although Dan is diversifying the menu, prime aged steak is still the focus. He has also introduced more game items and the likes of ravioli stuffed with lamb shank and served in a clear broth, plus slow-cooked Midlands pork belly. Of the old cast, the deconstructed prawn samoosa and seared tuna are still big hits.
