Roasted cashews and apple slivers add a lovely crunch and a bit of sweetness to this fish dish. It's quick too; the fish doesn't require any cooking!

Preparation time: 15 minutes
Cooking time: 5 minutes
Cook the quinoa according to the instructions. For the dressing, stir the chives and parsley into the yogurt. Slice the apple into rounds and blanch the broccoli in salted boiling water for 3 minutes. Strain immediately and place the mackerel on the apple rounds and broccoli. Serve with roasted cashews, baby spinach and a wedge of lemon.
