Place the mince, coriander, onion, mustard and egg in a bowl and season to taste. Mix the ingredients well by hand, and shape into four equal-sized patties. Chill them in the fridge on a kitchen towel for 30 minutes to set. Lightly fry the patties in olive oil in a griddle pan over medium-high heat for 8 minuntes each side, turning once. Generously sprinkle with grated cheese, and keep warm in the oven until ready to serve. Make your own burger sauce by mixing chutney, tomato sauce and mayonnaise together, and spread it over the buns. Assemble the burgers with onion slices, burger patties and rocket.
To make the coleslaw, combine the ingredients in a large bowl, and season to taste.
