Heat the vegetable oil in a pot. Add the curry paste and spices and sauté for 2 minutes. Pour in the coconut milk and stock, add the lime leaves and bring to the boil.
Add the chicken, cover, reduce to a simmer and cook for 40 minutes. Take out the chicken, cool slightly and pull the meat of the bone, shred and add back to the pot. Add the cooked noodles, fish sauce and sugar.
Ladle the soup into the bowls, add the coriander and shallots and serve with wedges of lime.
