After four years at Lynton Hall in Pennington, KZN and numerous awards, top SA chef, Richard Carstens – Eat Out Chef of the Year for 2005 – has arrived at Manolo restaurant in Cape Town.
Inspired by the scientific food concept of molecular gastronomy and the cooking of Ferran Adria, Richard is known for his extraordinary food combinations and magically different dishes, unlike anything you’ve had before.
After seeing potential in Manolo a while back, Richard has returned to his town of birth to take the sleek eatery to a new level. The cuisine style at Manolo is now New Contemporary.
Richard says he is excited by this new venture, and a new working team (one of which is Garreth Adams, assisting Richard – former sous-chef from Ginja) and having more ingredients at his disposal.
Cape Town is more cosmopolitan and the food is on par with overseas standards, says Richard.
