After the departure of Richard Carstens from KZN’s luxury country hotel Lynton Hall, in March, the establishment has entered a new culinary era.
While busy creating a reputation for Lynton Hall as a gourmet destination of note, Richard trained his former assistant, Steven Kruger, for four years. The day has now arrived for Steve to take over the reins and he was appointed head chef from March 1.
There is a strong influence of deconstruction cuisine from Richard, but Steven now continues with his own touches – his idea being to whip up more accessible fare which is adapted to the South African market.
According to Lynton Hall general manager, Germain Lehodey, guests have responded extremely well to the culinary shift so far.
Steven has worked his way up over the last five years since starting out in the hospitality industry, as well as concurrently completing a correspondence course through Intec College.
Kitchen inspiration
Steven feels that Richard inspired him greatly, teaching him about food and life in general.
International inspiration includes Albert Adria, master dessert chef (Steven has a passion for desserts), brother of Feran Adria, ‘for his creativity’; Michael Bras ‘for his precision’ and Oriol Balenguer ‘for his techniques’.
Besides this, Steven had an early start in his love affair with cooking, having prepared meals for his family from an early age.
